Deep ruby-purple. Bright nose of blackcurrant, cassis, dark plum and graphite with a lift of crushed mint, cedar and pencil shavings from the oak. Medium- to full-bodied with fine-grained, gently grippy tannins, a savoury core and a long, mineral-edged finish. Excellent with roast lamb, beef ribs, mature cheddar or a Sunday roast.

Tokara sits high on the Helshoogte Pass between Stellenbosch and Franschhoek, on cool granite-and-clay slopes at 380m. Founded by financier GT Ferreira in 1999, the estate has built a reputation across all three of its tiers — entry, Reserve Collection and Director’s Reserve — for restrained, age-worthy wines that lean classical rather than ripe.

The estate-tier Cabernet Sauvignon is sourced from cooler Helshoogte parcels, hand-harvested, fermented in stainless steel and aged in French oak (a small percentage new) for around 14 months. A purist Cape Cabernet — designed to drink at four to six years from vintage rather than over a decade — with the producer’s house-style restraint and freshness.
