2025 Vintage — Cairanne AOP, Southern Rhône, France
Domaine Boutinot is the UK producer-merchant’s own estate operation in the Southern Rhône, with parcels across some of the appellation’s most distinctive crus. Cairanne is one of the village crus, on the right bank of the Rhône, known for soils that range from sandy red clay to the white limestone-and-clay parcels that give this cuvée its name — “Argiles Blanches” (white clays).
A Southern Rhône white blend of Clairette, Grenache Blanc, Roussanne and Viognier from the estate’s higher, cooler-site parcels on white-clay soils. Fermented in stainless steel and large old oak foudre with extended lees contact for texture, no malolactic conversion to preserve freshness. A mineral, focused expression of Cairanne white — built for the table rather than the cellar.
