A bright, perfumed Pinot Noir from the Hemel-en-Aarde Ridge. Aromas of red cherry, raspberry and rose petal lift over forest floor and a peppery savoury edge. Light to medium-bodied with crunchy acidity, silky tannins and a long, mineral finish. Drinks beautifully with charcuterie, mushroom risotto, roast duck or grilled tuna.

Crystallum is the family-run project of Peter-Allan Finlayson, whose father Peter Finlayson pioneered Pinot Noir in the Hemel-en-Aarde. The Crystallum range is rooted in cool-climate, low-intervention winemaking — old-soul Pinot Noir and Chardonnay with bright fruit, fine tannins and a clear sense of place.
‘Litigo’ is sourced from a single high-elevation parcel on the Hemel-en-Aarde Ridge. Whole-bunch ferments in open-top vats, native yeasts only, then aged in seasoned French oak (zero new wood) to keep the focus on site and fruit rather than barrel. Lifted and savoury, with the cool-climate freshness that has become Crystallum’s signature.
