Deep amber-mahogany. Extraordinary aromatics of dried apricot, quince paste, orange marmalade and honeycomb over roasted nuts, saffron, salted caramel and marzipan. Lush and viscous on the palate, but held together by piercing Chenin acidity and a saline, botrytis lift that keeps it from ever cloying. Endless finish. Mullineux’s ‘Olerasay’ is one of the most extraordinary wines in the Cape — an old-solera straw wine of dried old-vine Chenin Blanc from Kasteelberg schist, air-dried on straw mats before fermentation. The name is an anagram of ‘Solera’ — because that’s exactly how it’s made. Successive vintages are perpetually blended into a solera-style stack of small oak vats, with a small proportion drawn off each release, so each numbered release (‘1°, ‘2°, ‘3°, ‘4°…) contains more age and complexity than the last.

**Olerasay 4°** is the fourth release from the ongoing solera — the oldest, deepest and most concentrated iteration to date. Botrytis-influenced, viscous, still bright with old-vine acidity. Very small production; a collector’s straw wine.
