NV — Alsace, France
Sophie Schaal is a small Alsace estate based in Hunawihr, on the granite slopes that frame the eastern flank of the Vosges. Her wines are quietly precise — naturally farmed, low-intervention, and deliberately understated. The Crémant d’Alsace is her sparkling expression, made in the méthode traditionnelle from Pinot Blanc on her organic, hand-tended vineyards.
100% Pinot Blanc, hand-harvested and whole-bunch pressed. Second fermentation in bottle, aged on lees for around 24 months before disgorgement. Extra Brut dosage — minimal sugar to keep the fruit pure and the finish dry.
