2021 Vintage — Méthode Cap Classique, Western Cape, South Africa

The L’Ormarins estate in Franschhoek — founded in 1694 and now part of Anthonij Rupert Wyne — produces one of the Cape’s most consistent Blanc de Blancs Cap Classiques. The bottling is built around Chardonnay grown on the estate’s cooler, higher-altitude parcels, fermented and aged using the same traditional bottle-fermentation method as Champagne.

100% Chardonnay. Hand-harvested at the cooler end of the ripening window to preserve acidity and aromatic detail. Vinification begins in stainless steel, after which the still base wine is bottled with the tirage liquor for secondary fermentation ‘en bouteille’ and rested on its lees for extended ageing before disgorgement. The result is a precise, lees-driven Blanc de Blancs with the toast, biscuit and citrus profile of classic Champagne styling, lifted by the South African sunshine into ripe orchard fruit on the palate.
