Vinification
Both Semillon and Sauvignon grapes were hand-picked, the
Semillon a week after the Sauvignon, whole bunch pressed and
barrel fermented. Harvesting dates were 16 and 25 February
respectively. The Semillon was fermented in 25% new Francois
Frere barrels and the Sauvignon in old 500 litre barrels. The
wines were matured for 9 months before being bottled on 21
December 2015. Released June 2018.
